Cookie Monster

You will see a variety of recipes posted here; all have been adapted to be gluten free. My husband was diagnosed with Celiac Disease about a year ago so we have been forced to modify our diets, which hasn't necessarily been a bad thing. This is a great peanut butter cookie recipe that is easy and delicious. I promise you won't even notice the missing flour. I added semi-sweet chocolate chips to this batch but you can certainly do with out.

Recipe:
1 cup smooth peanut butter
1 cup sugar
1 teaspoon baking powder
1 egg


Cream together peanut butter and sugar. You can use a stand mixer or a hand mixer.


Add baking powder and egg and, in this case chocolate chips, until well blended.


Roll into 1 inch balls and place on cookie sheet. Bake at 350 for 11-13 minutes. Remove and let cool.

P.S. We are almost done with the chalkboard wall. It took a couple more coats of magnetic primer then originally predicted.

    I made these for some GF buddies and they loved them!! I subbed out the egg for a vegan alternative and was able to cover all kinds of dietary restrictions with one recipe. Yum!!
